When I first went vegan, I was enamoured by all the pictures of beautifully plated meals, watching enthusiastic and bright youtubers share their “what I eat in a day” vlogs that promoted mostly raw veganism, then finding junk food mukbang vegans who are remaking all my favorite restaurant foods fully vegan. I spent time planning out grocery store hauls to buy things for very specific meals that I wanted to cook, but then on a regular Tuesday morning before work I’d be confused as to what I was supposed to eat. I got so tied up into the glamorized version of veganism that I was introduced to in the beginning, that I struggled to translate my new lifestyle into my normal everyday less glamorous life.
So if you are a new vegan or still thinking about it, here are my top three easy AF vegan breakfasts to get you going on any normal day.
So let’s start off with the hugely popular and very versatile brekky, avocado toast! The toast that defined a GENERATION.
In all seriousness, smooth avocado on top of toasted Ezekiel bread topped with a pinch of salt & pepper and a dash of hot sauce is all you really need for a satisfying breakfast. I have also been known to add some tomatoes, sauteed mushrooms, onions, sometimes even capers to my toast.
Secondly, the tofu scramble, an easy clean out the produce drawer kinda meal. My favorite “hack” for making tofu scramble is mixing crumbled firm tofu with some of the Just Egg mixture in the pan. The Just Egg bottles are pretty expensive, so by combining with the tofu I get a more dense scramble that’s texture is just the same as actual eggs. My base recipe for tofu scramble is ½ bottle of Just Egg and 1 pressed firm tofu block, half white onion, several cloves of diced garlic, onion powder, garlic powder, salt, pepper, some herbs and a pinch of turmeric for a little color. Add any veggies that you want.
Lastly, this one has been my go to since the weather has been getting warmer. YOGURT PARFAIT. I know, but what vegan yogurt do I useee, I hear you. It can be tricky, but I did the hardwork for you. Here’s my yogurt recommendation: So Delicious Vanilla Coconutmilk Yogurt. That’s the one, I’ve tried several other brands and this one is by far the best non dairy yogurt. Period. You can find it in individual containers or larger tubs like other yogurts. Now to properly make your parfait, slice some strawberries and then layer your yogurt, strawberries, blueberries, granola then repeat OR just combine it all at once and add whatever freaking fruit you want. I’m merely throwing ideas out there for ya!
Ok, so yeah these meal ideas are super freaking easy & more like reminders, but that’s like the point. These are probably the easiest choices that you forgot about by now after trying to make all those fancy recipes from Youtube. Don’t let social media get it twisted, eating vegan meals isn’t all that complicated, mainly just minor swaps and that’s it! So easy!
